I can't say as I know why soaking would help- it seems counter-intuitive for the reasons you've stated- but I can say that Alton Brown didn't make it up himself. Soaking is the usual first step for all the porous unglazed terra-cotta-and-similar cookware I've encountered- tajines, casseroleish dishes, etc.
